Ingredients
- 1 can Jackfruit
- 1 cup Coconut Milk
- 2 tbsp Coconut Oil
- 1 tbsp 3Lankans Gourmet Curry Paste
- 1 medium Tomato chopped
- 1 medium Red Onion chopped
- 1 tbsp Garlic minced
- 1/2 cup Cilantro Leaves
- 1/4 cup Lime Juice
- Salt and pepper to taste
Instructions
- Heat oil in a large nonstick skillet over low heat.
- Add the 3LANKANS Gourmet Curry Paste and Onion and cook until the onion is softened.
- Add the Jackfruit, season with salt and pepper, and cook over medium heat.
- Stir in the coconut milk and simmer until the sauce is thickened and the curry starts to caramelize
- In a bowl, add the tomato, onion, cilantro and lime juice; season with salt and pepper.
- Divide the jackfruit mixture among the tortillas. Top with the salad.
